Steak Fajitas


I have a quick and easy dinner idea for you all, this one is in our regular rotation. I am so fortunate to have a great local source for grass-fed meat, I buy it directly from the farm (Sierra Linda). They sell pre-packaged steak fajita meat that is so good, and it makes a super easy weeknight meal.


If you can't find natural meat that is pre-marinated, it is easy to make your own. Just slice a steak in 1/4" strips and let it sit for about an hour in a marinade, I take the shortcut and use the seasonings from Thrive Market. I mix 1/2 a packet of their Fajita seasoning with some water and let the meat soak before cooking. Then I add it to a frying pan and cook quickly, removing it from the heat before it is cooked all the way through. You can also buy Carne Asada for a similar result just make sure it's grass-fed.


We serve on Trader Joe's Almond Flour tortillas (I stock up on these and freeze them and use as needed), with just some finely diced red onion, cilantro and a little bit of Monterey Jack cheese (optional if dairy-free). I also sometimes add some mashed avocado or a small amount of sour cream or Greek yogurt. A fast and easy meal!
